1 oz Dimmi Italian cordial
3/4 oz freshly squeezed lime juice
3/4 oz chipotle chili infused light amber organic agave
2 dashes of Fee Brother's Peach Bitters

 

In a shaker, muddle 1 cucumber slice and then add Ilegal Mezcal, Dimmi Italian cordial, lime juice, agave syrup, and peach bitters. Shake, double strain with tea stainer, and pour into a Collins glass filled with ice. Top with soda, and garnish with grated orange zest.

Pumpkin Pie Spiced Honey: Make a 1:1 honey syrup (1 part honey, 1 part hot water), add pumpkin pie spices to taste, and let cool. Suggested: nutmeg, clove, allspice, cinnamon (lots), and ginger (a pinch).

Shake dry, shake with ice, and double strain into mason jar.
Garnish with grated nutmeg and orange zest and serve with a nutmeg cookie.

Combine all ingredients except club soda and rosemary in a shaker with ice, and shake for 10 seconds. Strain into an ice filled Mason Jar. Singe the rosemary with a lighter and extinguish in your drink. Garnish with a lemon wheel.

1 tbsp. Mint Agave Nectar Simple Syrup (see below)

Mint Leaves

 

Mint-infused Mezcal: Wash mint leaves thoroughly and pat dry. Add about 40 mint leaves (plucked from stalks) to the bottom of a mixing bowl, then add mezcal, completely covering the mint. Let sit for 15 minutes, then remove leaves, laying them out on a sturdy paper towel. Roll and squeeze the mint extract into the mezcal. Repeatedly dip the towel in the liquid and squeeze again to get as much mint as possible. Repeat the whole process to get the mint levels you want.

Mint Agave Nectar Simple Syrup: combine 2 tbsp. sugar, 1/4 cup agave nectar and water in a small pan and bring just to a boil. Remove and cool. Add eight sprigs of fresh mint, cover and chill overnight.

For the Juleps: Make each julep, one at a time. Fill cup or glass with crushed ice, add one tablespoon mint agave nectar and two oz. mint-infused mezcal. Stir rapidly with a bar spoon to frost the outside of the cup. Garnish with fresh mint.

Oaxacan Miel

In a mixing glass combine:

- 1/2 parts Bärenjäger Honey Liqueur

- 1/2 parts sweet vermouth

Add ice, stir, strain into an old fashioned glass with fresh ice. Garnish with an orange twist.

Ingredients:
1.5 oz Illegal Mezcal

Method:
Combine all ingredients. Dry shake, add ice, then shake/strain over the fresh ice.
Top with a raspberry port drizzle and toasted rosemary sprig.
